I actually eat my ramen with dried union flakes for the crispiness lol. Just let the noodles soak to how you like it and add the crunchy stuff just before you eat it. That said, I don't make mine with a lot of soup.

Dried onion flakes sound to me like would take a little longer to soggy up compared to potato chips. 🤔 I really don't think they can stay crispy for a second bite even if you sprinkle them right before serving. But, maybe I'm wrong. lol.
